Potato Wedges w/Peri Peri

Serves
4-6

Ingredients
Birch & Waite Peri Peri Dressing
6 medium Golden Delight potatoes
2 sweet potatoes
2 - 3 tablespoons oil
Parsley, Sea salt

Method
1. Wash potatoes. Prick potatoes with a fork several times. Place evenly around a microwave turntable. Microwave on High 10 minutes.
2. Repeat preparation with sweet potatoes and microwave on High for 5 minutes.
3. Cut all potatoes into wedges.
4. Heat oil in a heavy based fry pan. Pan fry wedges in batches, turning once.
5. Put cooked wedges onto absorbent paper before serving. Season with salt and parsley.
6. Serve with Birch & Waite Peri Peri Dressing
